Zucchini Bread

    

     Everyone is making zucchini bread. Joy made zucchini bread. Kristin at the Kitchen Sink made zucchini bread. Scroll down the page on Seven Spoons and there's zucchini bread again. STOP TEMPTING ME PEOPLE! I want zucchini bread so bad so bad so bad. Furthermore, there's zucchinis in my fridge so its so close to possible.

    
     Who invented exams anyway? Why should an exam and a paper be standing in the way of my making zucchini bread? On the other hand, why can't cravings go away because I could sooo easily just make this zucchini bread after said exam and paper! But my craving just won't let me. I want this and I want this now. Isn't it so easy to crave food that way? You have cravings that just won't go away right?


     But, perseverance and a lack of time wins through in the end. I studied for my midterm and wrote my paper people, I did not make zucchini bread. BUT right after I got out of my midterm, I did. I sat there and shredded away at the zucchini with my peeler (I don't have a grater! Next kitchen implement to be acquired. Other than an immersion blender. Which by the way I actually go to use IN REAL LIFE this weekend...and it was awesome...). Anyway, in the two hours between my midterm and my next class, I shredded zucchini, mixed up a batter, and baked awesome zucchini bread AND did (most of) the dishes. Woo hoo.

    
     And then, after my class, I got to eat the zucchini bread! What could be better after a day of exams? Warm zucchini bread, because I had left it in the oven during class - actually, I left it there because it wasn't fully baked by the time I had to leave but I didn't want to leave the oven on while I was in class, so I figured if I just turned the oven off it would finish in there while the oven cooled down. Phewf long explanation. When I came back it was still a little smushy right in the middle of the loaf, I recommend using the whole baking time properly! But in the end, I got a zucchini bread all crunch and crackly at the edges, soft inside, cinnamony and spicy, with the little flecks of zucchini all throughout. Even those smushy bits were delectable, and after eating a whole end of the bread, I then toasted a slice from the middle and buttered it. Yum. It is that fall season again, and it makes me happy inside.

Zucchini Bread
Adapted from Joy the Baker

1 Large Zucchini, Shredded (should yield 2 cups Shredded Zucchini) 
3 cups Flour
1 1/2 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Salt
3 tsp Cinnamon
1/4 tsp Nutmeg
1/2 cup plus 1 tbsp Milk 
1 cup Vegetable Oil 
2 tsp Vanilla Extract
1 1/3 cup Granulated sugar

Pre-heat the oven to 350 degrees and grease and flour an 8x4 or 9x5 loaf pan. Also, shred your zucchini! I used a peeler and then chopped up the rather large zucchini pieces I had, a grater would probably work better.

In a large bowl, whisk the flour, baking soda, baking power, salt, cinnamon, and nutmeg together. In a separate medium bowl, whisk the milk, vegetable oil, vanilla extract, and sugar together. Once the wet ingredients are thoroughly combined, fold in the shredded zucchini. Then, pour the wet ingredients into the dry ingredients and fold them in with a spatula. Make sure to keep lifting the flour up from the bottom of the bowl so all of it gets combined. Once it is well mixed, scrape the batter into the loaf pan and put it in a center rack in the oven. Bake it for 60-65 minutes or until a toothpick inserted in the center comes out clean. Take it out, and allow it to cool in the pan for 20 minutes before turning it out onto a wire rack. Cut slices and serve warm! Or wait for it to cool completely.

The Simple Things

     
     Isn't it sad that after all those amazing pictures, we have come back to this. Pictures I took at 2 am in the night, i.e. no natural lighting, while excessively tired and without much aesthetic sense? No, I'm not fishing for compliments. It just makes me sad that this post must follow the last. Or at least, it would make me sad if I didn't like the food of this post so much. The food being the bread of course, and this bread being brioche.


     For those who may not know, I am an Anglophile and an Asia-phile, an India-phile, and a Francophile. I just can't help it. Such beautiful places...with such amazing foods. I love crepes and croissants as much as the next person, I treasure my memory of being a fourth grader visiting Paris and walking around a grocery store munching on a fresh baguette, but this Saturday I craved something else. Also because, apparently I've gotten to the point where I enter a supermarket, look at the bread, and think: but why would I buy bread? I can just make it at home. It is a lovely point. So, putting two and two together: I made French bread - easy French egg bread - I made brioche! Ta da.


     I did this on Saturday and saved it up for now because I knew I would have absolutely no time to cook between then and now. Physics midterm people, and it ate up all my time. But you know the great thing about making bread? You mix a little, you let it rise and you study for a few hours, then you knead a little, and then study for an hour. It's a great process. Of course, that's if you actually study in between and don't start watching Friends. So, you study while you knead to make up for it!


     What can I say about this bread? It's delicious warm out of the oven. It's good toasted and with a lot of butter (well, obviously). It makes great French Toast. (It is the French cousin of Challah bread after all.) Why would you not make your own bread? Especially when it is as simple as this. The smell of freshly baking bread will reward you, and then the taste will take it over the top.

Brioche
Adapted from La Tartine Gourmande 


1 2/3 cup All Purpose Flour
2 3/4 oz Butter, Room Temperature
2 Eggs, Room Temperature
1 tbsp Yeast
2 tbsp Sugar
1/3 cup Warm Milk
1 pinch Salt
1 Egg Yolk

In a large bowl, mix the flour and yeast. Make a well in the middle and add the warm milk slowly. Then, add the sugar and pinch of salt. After mixing (you can use a wooden spoon or your hands), add the butter a small piece at a time. Mix each piece in before adding the next. Then, add the eggs one at a time. Mix well after each, then work the dough until it detaches easily from your fingers and is elastic. I had to add a little more flour at this point to make the dough less sticky. Cover the dough and let it rest in a warm place for two hours, until its size has doubled. Work the dough for ten more minutes, and divide it into four balls. Place them in a greased loaf pan, and cover. Let rise for another hour. Then, pre-heat the oven to 400 degrees. Brush the tops of the brioche with egg yolk mixed with a dash of sugar. Use scissors to make small cuts at the top of each of the balls. Bake for 10 minutes at 400 degrees then reduce the heat to 350 and bake for another 20 to 30 minutes. Once it is golden brown, remove from the oven and unmold.

Note:


My loaf pan only fit three of the dough balls, so I made the last one into a bun as you can see above. I just rolled the dough into a round and baked it on the baking sheet for slightly less time than the loaf (about 15 minutes).

My Jewish Roots


     

     I miss Brookline, Massachusetts. (That is where I'm from, for those who may not know.) I miss Super 88, the amazing Asian supermarket and food court unrivaled in all the world, and Baja Betty's for Mexican food, and PC Cafe for bubble tea. But, right at the moment, what I miss the most is Cheryl Ann's Challah Bread. Which is funny, because I don't really get it at that often in Brookline. But when we do, its always delicious, especially toasted and covered with a huge slathering of butter. Challah...that amazing rich egg bread with the slightly sweet note...Mmm.... I was lost in wanting it. Then, I had a revelation. I write a blog! I can make bread and blog about it. Its actually all for a good cause, its not just me avoiding studying for my Chemistry midterm because I have a random craving for Jewish breads. So, I made Challah Bread. 

     Making bread might sound like an arduous, awful task. It is really not that bad. There is the simple problem that most people don't own yeast, but once you buy a packet, you can keep it for two years without anything happening to it. You also need to have some forethought. You have to have the time to just sit around for two or more hours and wait for dough to rise, especially for this Challah which needs three risings to make it extra great. Other than that, all you generally need is flour and butter or oil. Challah is an egg-bread so it also uses, you guessed it: eggs. Beaten egg for the two egg washes are what give it that golden brown gleam and amazing crust. In general though, making fresh bread, and having that fresh bread smell in your kitchen, is so worth it that I would use any number of ingredients to achieve it. Here, I need just six. 

Original Dough before Any Rising
     For my Challah recipe, I used Smitten Kitchen's "Best Challah (egg bread) recipe." She made two loaves, and I cut it down to size for one. Other than that, I didn't change a thing. Well, I didn't add raisins or get poppy seeds for sprinkling (I....wasn't going to buy those), but I'm sure you won't mind the omissions. Check out her web site too, she has great pictures of her bread! She made circular loaves and straight ones, but I just made one circle because...I messed up in the braiding process and had to hide it. My advice to you: just follow the directions, even when they seem weird. When they say to double back a strand that you Just moved, just squish it down and then move it in the opposite direction. Fiddling with directions often gets you into trouble. Sigh.

     I know the instructions seem really long. But, its only the braiding thats a little tiresome. (You can also avoid it completely by just forming your challah into little buns instead of having one big loaf to braid.) The other instructions are just spaced out and extra detailed because I know a lot of people probably haven't made bread before, and its always good to know Exactly what someone means when they say "knead" or "punch down" the dough. Its really quite easy once you know how. And its so worth it. To have fresh bread on which to slather butter may be one of the greatest things in the world. This bread is moist and flavorful. And best of all, it has that Challah Crust. Those two egg washes really do the trick. So, someday when you have time, make this bread. You won't regret it. 

Braiding Prep. 
 Best Challah Bread 
Adapted from Smitten Kitchen, Adapted from Joan Nathan 

Makes 1 (large) Loaf 

1 package Active Dry Yeast (2 1/4 tsp) 
1/2 tbsp and 1/4 cup Sugar 
1/4 cup Vegetable Oil 
3 Large Eggs 
1/2 tbsp Salt 
4 cups All-Purpose Flour 

Preparing Yeast: In a Large bowl (you will be using this to make the dough in), dissolve yeast and 1/2 tbsp Sugar in 7 oz lukewarm water. Leave alone for five minutes, until the yeast is bubbly. 

Starting Dough: Whisk the oil into the yeast. Then, beat in the 2 eggs, one at a time. Next, beat in the 1/4 cup of sugar and the salt. After thoroughly mixing, gradually add the flour. Add enough flour so the dough comes together (I used about 3 3/4 cup total). Now, it is time to knead. 

Note: I mixed the dough with a wooden spoon, even though it was hard work, because I don't have a KitchenAid. You can also use a mixer with a dough hook to mix the dough together and then to knead. 

Kneading Dough: Turn the dough onto a floured surface. To knead, fold the dough, push it down, then turn it, and repeat. Do this until you have a round of dough that seems "cohesive, pliable, and elastic" (as Smitten Kitchen says in her bread making page) and is smooth. 

First Rising: Clean out and grease the large bowl you were using. Return the dough to it, and cover it with plastic wrap. Let the dough rise in a warm place for 1 hour, until it is almost doubled in size. 

Note: You can also let the dough rise in an oven that you heated to 150 degrees and then turned off, especially in this weather when there are few warm places.  

Prep for Second Rising: Take the dough out of the bowl onto a floured surface. "Punch it down" i.e. sprinkle the top with a little flour and press down on it Gently with flattened palms to deflate the dough. Try to push it into a rectangular or square shape if you can, but don't push too hard, it just takes a little. 

Second Rising: Put the dough back in your greased bowl, cover with plastic wrap, and let it rise again in a warm place for half an hour. 

Prep for Third Rising: If you want to add 1/2 cup of raisins you can add them here, kneading them into the dough. Otherwise, turn the dough onto the floured surface. In order to make the braided challah, take the dough and divide into 6 balls. You could stop here and have 6 smaller Challah Buns. Or you can braid them: 

Braiding the Challah: Roll each ball into a strand of dough about 12 in long and 1.5 in wide. Place each strand in row, parallel to one another. Pinch the tops of the strands together. Then: 

1) Move the Outside Right strand over 2 strands 
2) Take the 2nd strand from the Left and move it to the Far Right 
3) Take the Outside Left Strand and move it over 2 strands 
4) Move the 2nd strand from the Right over to the Far Left 
5) Start over with the Outside Right strand 
6) Once Done Braiding You have Two Options: 
          A) For a Straight Loaf: Tuck the ends underneath. 
          B) For a Circular Loaf: Twist it into a circle, pinching the ends together.

Grease a baking sheet, and place the loaf on it. Beat the remaining egg, and brush some of it onto the loaf. (If you don't have a brush, like me, you could use a spoon or just your fingers, as I did). At this point, you can freeze the loaf if you don't want to bake it today. Or, let it rise in a warm place for another hour. 

Baking: Pre-heat oven to 375 degrees. Brush the loaf with more egg. You can sprinkle the bread with poppyseeds here if you are using them. Then, bake it in the middle of the oven for 30 to 40 minutes, until it is golden. Cool the loaf on a rack.

Notes: 

If you froze the loaf, take it out of the oven 5 hours before you want to bake it. 

Any of the three risings can be done in the fridge for a few hours instead of just an hour, allowing the flavor to develop more. Remember to take the dough out and let it get to room temperature before moving on to the next step.
